When you want to treat yourself to something tasty, but don’t want to wait long, you can make cottage cheese muffins. And not too high in calories, and healthy at the same time.
So here are my ingredients:

First of all, break two eggs into the container in which you are going to cook


I used a blender glass, it is tall enough and nothing will splash out of it


Add fructose next. You can use regular sugar, but fructose would be better since it is 1.8 times sweeter than sugar and has the same amount of calories. We use less sucrose than sugar - we save on calories :)
You can of course use more than what I have. I just don't like overly sweet pastries and desserts.


Beat everything with a mixer. I have a whisk attachment on my blender.


Beat until the mass turns white and increases by about 2.5 times.


It should be a little airy. You can't see it in the photo, but you can feel it when stirring.


Now add cottage cheese. All at once. I use 2% cottage cheese, but you can use higher fat content.


Mix first as if with a spoon (with a mixer without turning on the speed), then at speed until smooth.

Add semolina. Mix with a mixer until the mixture is homogeneous.


Now let's prepare the molds. I have silicone ones. I soak them in water and then shake off the excess.
The main feature of my recipe is that everything will be baked in the microwave. So I take out the disk on which everything is heated and put my molds on it.


I had a bad experience before this. I first poured the dough and then put it in the microwave. Since the silicone mold is not durable and always bends, some of the dough spilled out. Even though it was carried by 6 hands :)

Pour in the dough. This is quite easy to do directly from the container in which everything was stirred.


My quantity was enough for 2 servings, that is, 4 cupcakes.


Now put the glass disk with the molds filled with dough back into the microwave. So nothing will come of it for sure


We set everything for 5 minutes. I have a very ordinary old microwave, and there is no power setting, so I set it to normal heating mode.


After 5 minutes, check doneness with a toothpick. If it gets stuck there, then set it for another 30 seconds.
Immediately remove the finished cupcakes and place them on plates.


Eat immediately after cooking


You can top it with condensed milk or jam, as I did. This is where it comes in handy that we didn’t add much sugar :)

You don’t need to spend a lot of time on delicious homemade cakes. Especially if the house has a microwave oven. Today there are many very quick recipes for treats. For example, you can easily cook a cupcake in the microwave in 5 minutes.

Ingredients: 4 tbsp. spoons of high-grade flour and granulated sugar, egg, 3 tbsp. spoons of fatty butter and milk, a pinch of baking soda, 1 tbsp. spoon of grated cocoa.

  1. One by one, all the stated ingredients are placed in a bowl. The butter needs to be melted. It is most convenient to first pour in the dry ingredients, and then fill them with liquid ones.
  2. All products are mixed with a whisk until the lumps disappear.
  3. The container in which the delicacy will be baked must be oiled. Next, the dough is poured into it.
  4. At maximum power, the dessert is baked for 5 minutes. Readiness is checked with a dry match.

Ingredients: 3 large tablespoons of butter and the same amount of sifted white flour, 2 tablespoons of granulated sugar and the same amount of fat milk, an egg, 1.5 tbsp. spoons of cocoa powder.

  1. The butter is heated in any convenient way until soft, after which it is ground with sand. A chicken egg is beaten in there with a whisk. Milk is poured in next.
  2. All that remains is to add the other dry ingredients – flour and cocoa. The amount of the latter can be adjusted to your taste. The more cocoa is used, the richer the chocolate flavor the dessert will have.
  3. If you want to make the aroma more intense, you can use spices - cinnamon, ginger, vanillin.
  4. The dough is poured into oiled glass cups. It should not fill more than half the container.

In small cups, chocolate cake is cooked in the microwave in just 2 minutes at a power of 900 W. The top of the treat should remain slightly moist.

Quick diet recipe in a mug

Ingredients: 5 tbsp. spoons of ground oatmeal, a full large spoon of cocoa powder, 2 tbsp. spoons of fat milk, egg, 1 tbsp. spoon of liquid bee honey.

  1. In a deep cup, mix all the stated components well. You can also add chopped nuts and/or dried fruits to the dough to taste. Such additions will make the treat even more tasty and healthy.
  2. The resulting mass is divided into 2 parts and placed into circles.
  3. The dessert is baked for 3 minutes in the microwave at maximum power - from 800 to 1000 W.

  1. The egg is ground with sand. Milk and melted margarine are added to the resulting mixture. The ingredients are mixed well.
  2. Gradually add all the flour into the mixture. All that remains is to add baking powder.
  3. The dough is poured into a ceramic container. A piece of chocolate is pressed inside the dough and nut chips are placed. To do this, it will be enough to spread the mass with a spoon.
  4. The delicacy is baked for 2.5 minutes at maximum power of the device.

The readiness of the dessert is checked with a wooden skewer.

Ingredients: 260 g each of semolina and crumbly cottage cheese, half a teaspoon of baking soda, 2 eggs, 2 tbsp. spoons of natural bee honey, half a glass of coconut flakes, 2 tbsp. spoons of sour cream, 90 g granulated sugar, 2 tbsp. spoons of freshly squeezed lemon juice.

  1. First you need to prepare the cottage cheese. It is mashed well with a fork until there are no lumps. If you have a blender at home, it is best to use it to grind cottage cheese.
  2. Granulated sugar, eggs, liquid honey, as well as all remaining bulk ingredients are added to the resulting base. The soda is pre-quenched with freshly squeezed lemon juice. If the honey is candied, then it must first be melted in a water bath.
  3. The thoroughly kneaded dough is poured into mugs. It should fill no more than 2/3 of the containers.

Cook the curd muffins in the microwave for five minutes at the maximum possible capacity.

How to cook in silicone molds?

Ingredients: 15 g cocoa powder, 45 g granulated sugar, 2 g baking powder, 60 ml full-fat milk, 40 g high-grade white flour, salt on the tip of a knife, 2 tbsp. spoons of refined oil.

  1. Using a hand whisk, mix all the bulk ingredients specified in the recipe in a deep bowl.
  2. The liquid components are combined in a separate container. This is milk and refined oil.
  3. The products from the first two steps are combined. They are mixed into a homogeneous mass without lumps.
  4. The resulting dough is poured into miniature silicone molds designed specifically for the microwave oven.
  5. With a device power of 750-800 W, the delicacy is prepared in 2.5 minutes.

  • cocoa powder – 2.5 tbsp. spoons (25 gr.);

  • a handful of marshmallows.
  • If you don’t have cottage cheese on hand, simply exclude it from the recipe (or replace it with a small amount of semolina) - without it the cake will turn out no less tasty. And it’s also not a key component - you can safely use nuts or coconut flakes instead.
  • Cooking time: maximum 12 minutes.

How to make chocolate cottage cheese cake in the microwave:

Beat the eggs with granulated sugar until fluffy using a blender.

Add cottage cheese and marshmallows to the sweet mixture, pour in milk, beat until smooth. If there are small pieces of marshmallow left, it’s not a problem. They will melt during baking.

First add the remaining bulk ingredients (flour, starch, cocoa and baking powder) into the curd mixture, stir, then pour in the butter.

Lubricate a small container (its volume must be at least 0.5 liters) intended for use in a microwave oven (plastic, ceramic or glass). Pour the chocolate-curd mixture into it, place it on a rotating dish in the microwave and cover with a lid.

Bake at 700 Watts. 6 minutes. Before removing the container with the finished cake from the microwave oven, wait a couple of minutes. Then remove the baked goods from the dish, place them on a plate, and you can immediately, without waiting for the cake to cool, serve the dessert to the table.
